Forget your classic potato pancakes, they are no longer in trend! This autumn apply a little twist by adding apple for a burst of sweetness and flavour! Flax eggs will keep these savory cages together – you can enjoy them at brunch or early dinner.

Savory Apple And Potato Pancakes

 

Recipe for two people

 

This recipe is vegan, dairy free, does not contain refined sugar

 

 

Ingredients:

 

3 potatoes (medium size)

 

1 apple (peeled and cored)

 

2 tablespoons lemn juice (we all hate discoloration)

 

2 flax eggs (2 tablespoons flax seed meal and 5 tablespoons water – mix and wait 5 minutes)

 

¼ cup wheat flour (whole)

 

2 tablespoons nutritional yeast

 

salt and papper (your preference)

 

coconut oil (or any frying oil for that matter)

 

 

How to prepare

 

Step 1: The potatoes and apples must be shredded in a food processor or with the help of a grater; the shreds need to be coated with lemon juice

 

Step 2: The shreds must be put in a strainer; squeeze out any excess liquids by simply placing your hand or use a spatula if necessary

 

Step 3: The shreds are then placed in a bowl; add the flax eggs, flour, nutritional yeast, sall and pepper. Everything should be well mixed

 

Step 4: Add coconut oil – make sure it is enough to cover the bottom of a large skillet; place on oven at medium heat

 

Step 5: Pour the batter into the pan – the size will be up to you, depending on how big you want the pancakes to get; just make sure you don’t overpour the pan.

 

Step 6: The pancakes should be cooked on both sides – keep on the oven until they are crisp and have a golden colour. Add them near a portion of vegan yogurt or salsa and enjoy!
